Loose surfaces attack the aircraft
Wheels on gravel throw stones upward and rearward at speed. Anything in that path, including engine intakes, flaps and fuselage skin, takes repeated impact damage.
Jet engines mounted low under the wing are particularly exposed, because they sit close to the surface and ingest whatever is lifted into their path.
Aircraft cleared for unpaved operations typically use modified equipment such as deflectors and reinforced surfaces, and even then the operation is inspected more frequently.
Geometry favors high wings and tail wheels
Aircraft designed for rough fields tend to place engines and propellers high above the surface, which keeps them clear of debris and of uneven ground.
Larger, softer tires spread the load, allowing operation on surfaces that would not support a narrow high-pressure wheel without rutting.

Length and strength are separate limits
A strip may be long enough for a given aircraft yet unable to carry its weight without deforming. Bearing strength is a distinct property from runway length.
Soft ground after rain or thaw can reduce a usable strip to nothing for weeks, which is why remote schedules are seasonal and often suspended in shoulder periods.
Operators reduce payload rather than risk marginal conditions, so passengers and freight compete for a shrinking allowance.
No infrastructure means no fallback
Many of these strips have no lighting, no navigation aids, no fuel and no maintenance. Landings occur in daylight and in visual conditions.
Aircraft must carry enough fuel to return or divert without refueling on arrival, which reduces payload further on long sectors.
A mechanical issue on the ground can strand an aircraft until parts and an engineer are flown in.
The constraint reaches the traveler
Strict weight limits mean baggage allowances on these services are small and enforced by scale, sometimes including the passengers themselves.
Schedules are indicative rather than fixed, and a day of weather can shift a departure by several days once the backlog of freight is factored in.
